The coffee-to-water ratio for this brew should be 3 tablespoons of coffee for every cup of water. It is 6 and 7 grams of coffee for every 100 milliliters of water.

Grind the coffee to such a thickness that its brewing does not last longer than 4.5 minutes. Brewing less than 3.5 minutes (too thick grinding) will make the brew too watery. Brewing longer than 4.5 minutes (too fine grinding) will make it flat and bitter.

Pre-wetting the coffee filter warms the chemex and deprives the filter of the paper aftertaste.
