SQUARES SELECTION - try their company with black coffee from chemex - they taste great!
Chemex - pour over method of making coffee. Chemex is both a brewer and a carafe for ready coffee. This iconic device has become an icon of utility design.
Chemex coffee is delicate, aromatic, tea-like, even floral in aroma. Ideal to drink as black, without additives.
HOW TO DO IT BETTER
Chemex likes coarse grinding. There is no sandy beach here anymore. We definitely go to the area of small gravel. The coffee particles are very clear.
COFFEE TO WATER RATIO
1:15 (15 parts of water to 1 part of coffee) - 3 tablespoon of coffee for every 1 cup of water
Thinking of a cup of coffee it is important to think about the water first. The water quality effects the final result very strongly. The water shloud be clean, odorless, transparent and without chlorine. Use the water you would drink by yourself.
To extract the best aromas from coffee you need water rich in calcium and magnesium in particular. The amount of these two minerals dissolved in water is a measure of hardness.
Cream or milk is never added to Turkish coffee.
Sugar is added during the brewing process, not after, so the need for a serving spoon is eliminated.
SIZE OF CUP, MUG, GLASS
chemex filter, coffee grinder
The coffee-to-water ratio for this brew should be 3 tablespoons of coffee for every cup of water. It is 6 and 7 grams of coffee for every 100 milliliters of water.
Grind the coffee to such a thickness that its brewing does not last longer than 4.5 minutes. Brewing less than 3.5 minutes (too thick grinding) will make the brew too watery. Brewing longer than 4.5 minutes (too fine grinding) will make it flat and bitter.
Pre-wetting the coffee filter warms the chemex and deprives the filter of the paper aftertaste.
