HOW TO BAKE EXCELLENT CHOCOLATE TART WITH CHERRIES

INGREDIENTS
  • 2 cup (400g)

    FRESH CHERRIES WITH STEMS

  • 1 cup (270g)

    HEAVY CREAM

  • 1 ½ cups (200g)

    FLOUR

  • 2 bar (200g)

    DARK CHOCOLATE

  • 1 stick (100g)

    BUTTER, CUT IN SMALL CHUNKS

  • ½ cup (100g)

    CREAM CHEESE

  • 4 tbsp (80g)

    BUTTER

  • 2 tbsp (40g)

    HONEY

  • 2 tbsp (16g)

    COCOA

  • 2 tbsp (12g)

    POWDERED SUGAR

  • ½ tsp (3g)

    SALT

    Combine the flour, cocoa, butter and cream cheese in a food procesor with salt and sugar and mix until ingredients form a loose ball. Gather everything, mix slightly and form a disc. Wrap tightly and place in the fridge for a resting period of minimum 30 minutes. Remove the pastry from the fridge, roll out to ¼ inch (0,5 cm) thickness the size to fit the form, and place in a tart form. Prick the pastry with a fork and bake in 180C for about 20 minutes. When done remove from the oven and let cool.

    Melt the chocolate with the cream, butter and honey. Mix until homogenous and pour over to the cooled crust.

    Adorn the tart with the cherries around the perimeter. Sprinkle with mint and thyme leaves.
