INGREDIENTS
  • 1 cup (380g)

    MASCARPONE

  • 4 pcs (200g)

    EGGS - SEPARATED

  • 1 cup (200g)

    SUGAR

  • 2 sticks (200g)

    BUTTER

  • 1 cup (130g)

    FLOUR - PLAIN (ALL­ PURPOSE)

  • 1 pcs (100g)

    LEMON - ZEST AND JUICE

  • 2 pcs (100g)

    EGGS

  • ½ cup (60g)

    POWDERED SUGAR

  • ¼ cup (50g)

    MELTED BUTTER

  • 4 pcs (40g)

    EDIBLE FLOWERS

  • 2 tbsp (30g)

    MELTED CHOCOLATE

  • 2 tbsp (30g)

    ALMOND FLAKES

  • 1 tsp (4g)

    BAKING POWDER

  • 1 tsp (4g)

    VANILLA EXTRACT

  • 1 pinch (1g)

    SALT

  • ¼ tsp (1g)

    ALMOND EXTRACT

    Split the eggs. Beat the egg whites until stiff and put aside.

    Whip the egg yolks with sugar until pale and trippled in volume. Add the vanilla together with flour, almond extract, lemon zest and juice, salt and baking powder. Mix thoroughly, scraping down the batter from of the sides of the bowl.

    Add the oil and mix in gently the beaten egg whites in 3 portions. Pour the batter into one or two well buttered (8 inch in diameter) pans with removable bottoms.

    Bake in a preheated oven at 180 degrees for about 30-35 minutes or until a toothpick inserted in the cake comes out clean.

    Cook the eggs with sugar and lemon juice and zest over a gentle heat or in a bowl over a pan with simmering water, until slightly thickened. Pass thru the sieve to remove the zest and mix in butter cut in small pieces. Mix in mascarpone and beat until thickened.

    Place the cake on a cake stand and cover with slightly cooled lemon cream. Sprinkle over with almonds and drizzle with chocolate. Adorn with edible flowers.
