INGREDIENTS
  • 2 cups (500g)

    MASCARPONE OR CREAM CHEESE

  • 1 cup (270g)

    HEAVY CREAM, HEATED

  • 1 cup (230g)

    POURING CREAM - HEATED

  • 1 bar (100g)

    DARK CHOCOLATE, CHOPPED

  • 1/3 cup (75g)

    SUGAR - CASTER (SUPERFINE)

  • ¼ cup (50g)

    ORANGE LIQUEUR

  • 2 tbsp (30g)

    RUNNY HONEY OR AGAVE SYRUP

  • 2 tsp (8g)

    POWDERED GELATINE

  • 1 tsp (5g)

    VANILLA EXTRACT

PREPARATION

    Place half the orange liqueur, chocolate, 1 cup cream and honey in a pan and heat through. Add a cup of mascarpone and beat until fuffy.

    Place the cream, sugar, vanilla and other half of liqueur together with gelatine in a saucepan over medium heat and bring to the boil. Remove from the heat and set aside to cool. Once cool add 1 cup of mascarpone and beat until fluffy.

    Fill two glasses half full with chocolate mixture and top with cream mixture, repeat with two glasses starting with cream mixture and topping with chocolate mixture.
